This is Fred Ball for Zions Bank, speaking on business.

Ron Terry loves to cook and eat. So for him nothing could be better than owning and operating his own restaurant--the one-of-a-kind Buffalo Bistro in southern Utah. The little restaurant is located in what was once known as Spencer's Homestead near Glendale along Highway 89, halfway between Zion National Park and Bryce Canyon.

And one-of-a-kind it is. RonÕs restaurant serves up such wild offerings as rabbit and rattlesnake sausage; buffalo burgers, steaks and ribs; Cornish game hens; barbecued wild boar and even Rocky Mountain oysters. It's an eclectic menu of exotic Western fare but tourists and locals alike love it, and Ron has kept them coming back for the past seven years.

Ron started cooking about 20 years ago. It was about the same time he moved to southern Utah from Salt Lake City where he grew up. He worked for several years at a restaurant in Springdale and eventually decided to open his own.

He chose the entrees for his menu after talking with a woman who sold wild game meat. The food piqued his interest and after trying it for himself, he decided that's what he would offer. The Buffalo Bistro opened soon after.

In addition to the wild game, Ron offers other foods prepared in his own way, including salads, veggie burgers, chicken and a unique Anasazi Taco made with foccacia bread, beans, cheese and sour cream. He orders his vegetables and salad from a greenhouse in Kanab so they're always fresh. Ron told me his recipe for rabbit garnished in honey, curry and basil came to him in a dream. For dessert, there are several kinds of cobbler.

The Buffalo Bistro, with its ranch dˇcor and indoor/outdoor dining, is open seasonally from April to October. It opens every day except Tuesday from 3 p.m. to closing, which Ron said is whenever his guests have finished dining. Next week on June 15, Ron will host his annual festival featuring Rocky Mountain oysters. The festival typically attracts a large crowd and includes live music.
